The History of Falafel

Falafel is one of the most iconic street foods in the Middle East, with roots stretching back centuries across Lebanon, Egypt, Palestine and Syria. The word itself is believed to come from the Arabic filfil, meaning pepper, reflecting the spiced nature of the dish.

In Lebanon, falafel is made exclusively from chickpeas (unlike the Egyptian version which uses fava beans). The chickpeas are never cooked before blending — they're soaked raw overnight, which gives Lebanese falafel its signature light, fluffy texture and vibrant green interior.

At Lebanese Taverna, we honour this tradition. Our recipe hasn't changed since we first opened our doors in Hammersmith. It's the same blend of chickpeas, fresh herbs and spices that has been served in Lebanese homes and street stalls for generations.
